BARLEY SOUP WITH CRUNCHY VEGETABLES

INGREDIENTS FOR 4 PEOPLE
-250gr pearl barley
-50gr pancetta
-1 onion
-1 potato
-2 carrots
-1 courgette
-1 red pepper
-1 celery stalk
-plenty of basil
-salt
-pepper
-extra virgin olive oil
-1 L water
PREPARATION
-Finely chop the onion, carrots, celery, potato and pancetta. Put everything in the cooker and add four ecodoses of water. Also add the barley after rinsing it well.
-Add salt to taste, a sprig of rosemary and black pepper and put the lid on.
-Turn the heat up to highest. From the hiss, lower the heat by 2/3 and let cook gently for 15 minutes.
-After 15 minutes, let the steam vent off. Pour on a serving bowl and add a drizzle of oil and plenty of fresh basil.
