INGREDIENTS FOR 4 PEOPLE

600gr beef chump,

300gr peeled tomatoes,

50gr pancetta cut into thick slices,

½ Ecodose of red wine,

1 Ecodose of water,

2 celery stalks,

1 red onion,

1 carrot,

1 bay leaf,

2 cloves,

Extra virgin olive oil,

Salt and pepper

 

PREPARATION

1 Clean and wash all the vegetables and cut them into small chunks. Sauté the meat wrapped in pancetta in 2 tablespoons of oil. Season it with salt and pepper, add the broken up bay leaf, add the wine and let it evaporate. Brown the meat for about 8 minutes, turning often.

2 Add the vegetables and cloves, then the coarsely chopped tomatoes and the Ecodose of water. Close the cooker and when the valve starts whistling turn the heat down completely and clock 40 minutes cooking time.

3 Let the steam vent gradually, open the lid, remove the cloves and thicken the sauce on high heat for another 10 minutes. Serve the meat cut into slices with the cooking juices.
