Ziti alla Norma with swordfish

PRODUCTS USED FOR THIS RECIPE
INGREDIENTS FOR 4 PEOPLE
300g broken ziti
250g thickly cut swordfish steaks
500g long aubergines
50g peeled almonds
1 sprig of mint
600g vine tomatoes
1 garlic clove
white wine
extra virgin olive oil
salt and pepper
PREPARATION
1. Cut the aubergines into slices, brush with oil, cook on the griddle and salt. Bring a pot of salted water to a boil, blanch the tomatoes, drain, peel them, remove the seeds and dice their flesh.
2. Remove the skin of the swordfish steaks and cut them into chunks. Coarsely grind the almonds, toast them for 2 mins in the pan and set aside. Add a little olive oil in the same pan and brown the garlic, add the swordfish and cook for 1 min. Pour a little wine and let it reduce. Add the diced tomatoes, a little salt and cook for another 1-2 mins.
3. Boil the ziti in the pasta pot until al dente and drain. Transfer them into a bowl with the sauce, the grilled aubergines, almonds, 4-5 chopped mint leaves, a drizzle of olive oil and gently stir.
